Sweet Cheese Dumplings
Ingredients:
Batter:
11/2 cups flour
2 eggs
tsp. salt
1/4 cup water
Filling:
18 oz. cottage cheese
granulated sugar
Topping:
challah crumbs
Preparation:
Combine eggs,
flour, salt and water and knead well until dough is smooth.
Roll dough on
flat surface until thin.
Cut dough into
4" squares.
In seperate
bowl mix cottage cheese and sugar to make filling.
Place 1 Tbsp.
of filling on each square of dough, then fold in half.
Pinch edges
of each square, closing dough and forming dumpling.
Cook dumplings
in mildly salty, boiling water for 15 minutes or until finished.
Strain.
Sprinkle with
challah crumbs toasted in butter and sugar.
